Those holes are made because of the cylindrical tube they put the donuts through (when baking?) There are ice with holes in the middle too. I know that they spray water on the tube and it forms into ice in some freezing machine....
The bakers put the hole into the donut. Originally when cooking a donut the middle never fully cooked or the outside had to be overcooked.So taking the middle out those years and years ago was more for the baking then th looking.
